f you’re wondering how to preserve fresh herbs so you can use them all year, the good news is — it’s easier than you think.

Herbs are some of the easiest plants to grow in a home garden. And once established, many of them keep coming back year after year.

In our garden, mint, oregano, chives, rosemary, sage, bay leave and green onions are perennial herbs. Some of these plants are 6–7 years old and still thriving. Once you plant them, they become part of your landscape.

Then there are annual herbs like basil (all varieties), dill, parsley, taragon and cilantro. These need to be replanted every growing season. They grow fast, produce abundantly, and then disappear when the season ends.

That’s why learning how to preserve herbs naturally is such a game changer.

Why Preserve Fresh Herbs?

When your garden is overflowing, you can only use so much fresh basil or parsley at once.

Instead of letting herbs go to waste, preserving them allows you to:

  • Store herbs long term

  • Reduce food waste

  • Save money

  • Enjoy homegrown flavor year-round

  • Extend your harvest beyond the growing season

The best time to preserve herbs is when they’re at their peak — healthy, vibrant, and abundant.

The Easiest Way to Dry Herbs at Home (No Dehydrator Needed)

There are several methods for preserving herbs — freezing, dehydrating, blending into oils — but if you’re looking for the simplest way to dry herbs without special equipment, here’s what I do.

I tie fresh herb bundles with kitchen twine and hang them in my kitchen to air dry.

That’s it.

No dehydrator , no complicated steps.

This method works especially well for herbs like:

  • Rosemary

  • Oregano

  • Sage

  • Thyme

  • Mint

Over time, the herbs dry naturally. Once they are fully dry and crisp, I crumble the leaves and store them in airtight glass jars away from moisture and direct sunlight.

It’s one of the easiest and most natural ways to preserve herbs.

Tips for Drying Herbs Successfully

f you want the best results when drying herbs at home:
