Recipe:

1 lbs carrots, peeled and chopped

1/4 cup olive oil

1 1/2 Tbsp minced green pepper

1 small garlic clove

1 Tbsp green onion or chives

1 Tbsp lemon juice

1 tsp paprika

1 tsp salt

1/2 tsp dry mustard

1/2 tsp dry basil

1/8 tsp black pepper


Blanch 1 ~ 1 1/2 inch peeled carrots in boiling water.

Cook until 75% done, middles slightly firm. About 5 ~ 7 minutes.

Drain and let cool down.

Whisk all ingredients in a medium size bowl.

Mix in the carrots and coat very well.

Cover and refrigerate at 12 hours ~ several days.
